In the cellar of the sonic cathedral occupied by Scotland’s finest purveyors of graceful, ethereal dream pop lies old Speyside whisky barrels. Each cask has a story, each one filled with 90/- ale aged on a mixed culture. We all go cherry picking from the trees behind the cathedral; blood red juice dripping from our hands.
We’ll use this juice to add a sweet/sour intensity to the wee heavy. This might all sound like a dream and an oaky, sweet, tart, funky, mixed fermentation cherry ale might sound like a dream beer. But if this is a dream, then wouldn’t you have woken up when the cork popped?
